One issue I've found with doing what you're thinking about is the delay you'll find between activating the controller and seeing the result on the screen.
The video output from your xbox will be routed to the video input on your video card and then through some program to be displayed on your monitor. There is going to be a slight delay on what you're seeing on your screen, enough to make game playing really annoying.
A much better solution is what liqnit proposed, use a direct vga output from your xbox and connect it to your monitor. The monitor you have has an HD15 and a DVI-D connector. Just connect your xbox directly to whichever one you're not using and you'll be set. I know you wanted to do this with stuff you already had and to show the coolness factor of using your video card to do it but I don't think you'd be happy with that result.
