On air my 7900GT used to get up to operating temp rather quickly, 44c I think it was idle.

Sure it could warm up pretty quick, especially if you are using programs (IE: games) that will put stress on the card.

Stock coolers were meant to provide adequate so expect the card to get warm during boot.
As long as the GPU temp doesn't reach anything crazy like 80c then I wouldn't worry if it just gets a little "warm" ;)
If you are worried get an aftermaket cooler like AC's NV5 (http://www.arctic-cooling.com/vga2.php?idx=40) which can be modded so its fits a 7900GT.

i've got a 6800gs and i found that the temperatures were hovering around 60 degrees and was quite noisy so i went out to get a Zalman VF900-Cu and now the temperatures around 40 degrees and is a whole lot quieter (18-25dba coz u got a fan controller) its also quite compact and fits most video cards so i recommend this cooler.
