Its really up to you. I have 7800gt's in sli and i stick with the regular latest forceware. Tho i do occasionally download and try the new betas. Check out http://www.guru3d.com/ .

It doesn't really matter what drivers you use as you won't see any performance difference really. Just use the newest drivers on nVidia's website.
