Does this happen in every game or just COD4?
Have you tried playing COD4 with only one 8600GT installed?
If you think its a motherboard driver problem you can get the newest set drivers for your motherboard can be downloaded here:
For WinXP: http://www.nvidia.com/object/nforce_winxp_8.43.html
For Vista 32-bit: http://www.nvidia.com/object/winvista_32_15.08.html
For Vista 64-bit: http://www.nvidia.com/object/winvista_64_15.08.html
Before installing the new motherboard drivers be sure to uninstalled the current ones first.
If trying all of the above doesn't help I suggest downloading memtest and giving it a run. You can download Memtest here: http://www.memtest.org/

First SLI 8600s is not much faster then a single, no where near as fast as a 8800GT.
It sounds like a normal SLI problem, be it with hardware or drivers. SLI takes a lot of time to get it to work right.

Like stating this fact has anything to do with his problem let alone solve it...

Not to start a fight or call anyone out but you would not be gettin higher FPS from twin 8600's over an 8800. no matter the class of each card.
SLI does not scale well and you are going to limited by the 128 buswidth on the 8600 cards. IF you truly are getting higher FPS than your friends with 8800 class cards, it would be a CPU or ram bottleneck holding there cards back is all.
