Since I've heard a lot about BSOD's / Memory, I thought that I would try to be proactive and ask the experts for some advise. I will be doing a build with the following components:
XFX nForce 680i LT SLI
Cooler Master Cosmos 1000 Case
Q6600 / Zalman 9700led
OCZ Memory SLI Ready (2Gx2)OCZ DII800 (OCZ2N800SR4GK) SLI Ready
Seagate 1T HD
My question is all about memory. Shouldn't I be OK if I keep it on "Auto" in the BIOS, since it's suppose to auto detect speeds and timings. I'm thinking since it's SLI Compatible with this board, that I'm hoping not to run into any problems. I'm not ready to OC until it runs stable for a month or so. Or do you think I will have to manually adjust the settings for the RAM. Any feedback would be greatly appreciated.

I've manually set my timings to the rated timings of my RAM - 4-4-4-12 - as if I had it on Auto it set the timings to 5-5-5-15...I have not had any BSOD's due to RAM...just check what the timings of that RAM is and set it to that.
The specification says CL 5-4-4-15 (CAS-TRCD-TRP-TRAS), so I'd manually set the timings to that...and also set the voltage to 2.1 Volts as most mobo's run at lower on Auto...my board was giving my RAM 1.8V when the rated voltage for 4-4-4-12 was 2.1V so I had to 'overclock' my RAM in BIOS.

Yeah, as long as you run the rated specs that are specified by your memory manufacturer, it should be fine. Do what alfhenrik said and leave the other memory settings in the BIOS alone.

I am no expert, but I am pretty sure Crucial makes reliable RAM.

As Alfhenrik says: set the memory voltage to 2.1V. If you have problems - no POST - try using only 1 stick to start with. Don't forget that when you update the motherboard BIOS you will have to reset the memory voltage.

I have never had any success with auto settings. I definitely recommend setting timings manually for best stability and performance, although you will need to do a fair bit of reading to find out what each one does. Some of the timings are calculated from each other, and setting them incorrectly can destablize the system.

Ive got that same memory, i get lots of BSoD when i OC it or mess with the timings. but right now im busy playing with the cpu and mobo, so Ill let you know how I do when i get to memory.
