Why does it smell so bad? But taste so good.....

Well that depends on the cheese- cheddar doesnt smell so bad, but blue cheese does but tastes good, or limburger which stinks and couldn't tell you what it tastes like as I wouldn't force it on my worst enemy, or say ricotta cheese has a off smell not to bad but tastes really good. some cheese doesn't even have much of a smell or taste lol I love cheese so I have eaten different types but I love swiss cheese smell and very different taste. lol

It's produced through the introduction of bacterial cultures, some bacterial cultures in the production of the cheese emit a stronger smell.

French Cheese (a lot of it any way) they carry to such an extreme that the bacterial culture runs wild with out salting it until late in the process, the salt halts or rather slows the process. Literally allowing it too completely transform it into a cheese that is full flavored. They go one step further with some cheese and let it become "nicely infested" with mold. Now that's some stinky cheese.

If you ever tour a cheese plant like I have, you'll find the smell over whelming and it might put you off cheese for a while like it did me. At the end of the tour we all smelled like a Cheetos Cheese Puff amplified a hundred times.

I'm surprised thousands of mice weren't following us much like the Pied Piper.

Well my question was more retoricle cause i know why it smells bad. Its just some things that smell disgusting taste really good.

In my worlds travels I have eaten some rotten cheeses. Rule of thumb, it will most likely taste like it smells; that applies to most things really. I had this cave-aged blue cheese in Italy, had like 1 inch of mold on the outside, smelled like you can't believe and tasted like foot.

Yea, im talking about like swiss cheese you can get at the deli. Smells nasty but smells real good.

For a second I thought I meant when cheese starts to rot. Then pretty much no matter what it tastes like it smells really bad. I for one tend to agree with Miker, that the really bad smelling cheeses tend not to taste so great either. Then again there are exceptions to the rule and even the bad smelling cheeses can be good in moderation or when spread out. I actually have two blocks of cheese in my mini fridge right now: Cheddar and Monterey Jack. Yum!

Yea i do the pre-packaged thing. I prefer shard cheddar.

My wife laughs at me because at any given time there are between 4 and 8 different kinds of cheese in my fridge. Favorite is swiss, but I always keep some fresh parmesan and romano on hand. Cheddar too, but I'll sometimes have 3 or 4 cheddars of different types at any one point.

Swiss is my favorite but I like ricotta cheese, cottage cheese, smoky cheddar, any cheddar... mozerella, I just love cheese!!!!

I love cheese too. When i was younger my parents couldnt buy pre-sliced sandwhich cheese cause id always eat it all.

Now you've made me do it. I'm three thousand or so miles from home and I had to go out and buy some cheese at the grocery store tonight. Good thing I've got a fridge in the hotel room.:grin:

Hahaha well cheese is just SOO good. When we go to Wal Mart later tonight im going to pick up a block of sharp cheddar myself ;D

I am eating some raw sheep's milk cheese atm. It was $21 a lbs at Whole Foods.

Good cheese deserves good mustard too, I usually have 8 or 9 different types of mustard hanging around in the fridge. Only two here though.

Im not a big mustard fan. I eat my cheese by itself or with some crackers. But i usualy put ranch on everything like a ketchup fan would.

When I pay 20+ dollar a lbs for cheese I don't even eat it with crackers.

I like to get some nice thick slices of crusty bread and throw 2 or 3 kinds of cheese on it and grill it. Sometimes I'll even throw in some mustard.

Yea, there you go cheese and mustard spicy brown, honey mustard, sweet and tangy, thats the way to eat cheese... But if you have no mustard plain works all the same...

I do..but it has to be room temp cause it tastes so much better when it is. :thumleft:
