RealTemp is reporting 10c cooler then Coretemp? What one should I base my fears on? realtemp is saying almost 50c after hours of 100% and CoreTemp is saying almost 60.

i would go with coretemp, i have never used realtemp though, and i do hear that realtemp is better with the 45nm chips

Well I am trying to keep my CPU from blowing up so I need to see what the real temps are.

Bios temp/ Probe II Temp +15c. It's the safest route to rely on.

Have you tried CPUID HWMonitor? Same people as CPU-Z so far it's been accurate on GPU and CPU temps, gives Minimum, Current, and Highest temps and every thing I've tried it on except the P45 chip set pretty decent with voltages too. (I probably need to get an update)
Speedfans good but causes problems with some Asus boards.
Realtemp is a single guy programming it and while it's accurate on some boards he has limited resources to develop it.
PCProbe + 15 but I'd check Speedfan, and CPUID HWMonitor to see how they match up and calibrate PCProbe to that if I were going to use PCProbe.
