Furmark over stresses your components more than games will. So if you hit 97c with that then in games you wont hit that high.
I haven't got any crashes yet so I'm not too worried just some high temps
GPU-z under sensors tab down where is says 12V
I don't seem to have that sensor

And this screen shot is using kombustor to stress the GPU and it maxes at 76
I think it's for higher end cards. My 580s have the 12v measurement.
What is your PSU power rated at?
I have the Rosewill Fortress 750W

I think it should be plenty of power
You would think, but I would check if you have a Kill A Watt meter. I'm pulling over 1000w at the wall with my machine.
I'll have to get one of those
They are like 30 bucks at Micro-Center and Newegg. Well worth it IMO. I thought SLI 580s would be ok on an 850w PSU as 3 280s were before but this unit gets rather hot when I play Crysis 3. I will admit, that is with both of them OCd and my 3960x at 4.6 but 1000w and lights flickering made me go whoa!
Reason I bring it up is because you might be capping the PSU even if they are only 560s.
