Would it be an eyesore to have a 3 monitor setup with eyefinity and have 2 monitors with 5ms response time and 1 with 2ms response time?

An eyesore? Probably not. If anything, what would be an eyesore would be the bezels being a break between the three monitors. That, and if one of the three monitors has a different resolution. Then, all three monitors would be running off of the lowest resolution monitor of the three. That would be the most eyesore of anything.

well what I was concerned with is weather there would be some sort of ghosting or breaks in frames due to the difference in ms

The only thing that is a known issue with AMD's Eyefinity is the screen tearing thing. From what I understand according to AMD, the screen tearing is a result of two different things:
1. The signal being sent from DVI / HDMI is sent to the monitors at different frequencies than those of the DP / MDP ports.
2. Driver related issue
The one thing that can alleviate this to an extent is to have all identical monitors.

If everything is relatively the same except response then you wont see a difference.
